Red Quinoa and Corn Enchilada Bake

    • Boil the red quinoa and keep it aside. 

    • Preheat oven to 350°F

    • For the enchilada sauce, take a medium saucepan and heat the oil. 

    • Cook the onions until golden brown. 

    • Add all the spices and tomato sauce to it. Stir well and simmer sauce for 10-12 mins. 

    • Take a large bowl and add tomatoes, corn, cooked quinoa, and cilantro in it.  

    • Add the enchilada sauce with this mixture with shredded cheese. 

    • Pour into the oven safe casserole dish with the sprinkled cheese on top and bake for 15-20 mins. 

    • The enchilada bake is ready!
