While you can use different types of fresh fish inceviche like halibut, snapper, or sea bass we’re going with an easy shrimp ceviche recipefor its simplicity and quick prep. We will cook the shrimp briefly and put in lime juice for tenderizing it. Plus, shrimps are a popular choice in Mexican-style ceviche!

Fresh & Tasty - Shrimp Ceviche Recipe

Ingredients 

  • 1 lb cooked shrimp, peeled, deveined, and diced 
  • ½ - 1 cup fresh lime juice
  • ½  tbsp Pride of India’s seafood spice rub (adjust)
  • 1 onion, finely diced
  • 2 tomatoes, diced
  • 1 jalapeno, diced
  • 1 cucumber, peeled and diced
  • 1/2 cup fresh cilantro, chopped
  • 1 cup avocado
  • 1 tbsp olive oil
  • Himalayan Pink Salt,to taste

Serving suggestion: Try with Pride of India’s Lentil crisps for a fun twist on traditionaltortilla chips!

Easy Preparation Steps-

  1. Boil the shrimp in salted water for 2-3 mins until just cooked. Drain and let cool, then dice into pieces.

  2. In a bowl, combine the diced shrimp and fresh lime juice. Cover and refrigerate for at least 1 hour to let the citrus infuse and tenderize the shrimp.

  3. Add the mix-ins: red onion, tomato, cucumber, jalapeno, avocados, fresh cilantro, olive oil and half a spoonful of Seafood Spice Rub.Stir everything together until well mixed.

  4. Chill again if you want.
