Gluten-Free Easter Carrot Cake with Rice Flour

Let’s prepare a moist and delicious carrot cake using white rice flour! This Easter cake recipe ensures a tender crumb and rich flavor that everyone can enjoy. The rice flour provides a light, slightly chewy texture that perfectly complements the sweet carrots and other wholesome ingredients in the recipe.

Ingredients: 

For the Cake:

For the Frosting:

  • 1.5 cup cream cheese

  • ¼ cup unsalted butter

  • 1 cup powdered sugar

  • 1/2 teaspoon vanilla extract

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans with one of the rice flours.  

  2. In a large bowl, whisk together gluten-free flours, baking soda, cinnamon, nutmeg, ground ginger, and Himalayan pink salt.

  3. In a separate large bowl, whisk together the unsweetened applesauce, coconut sugar, vegetable oil. Beat in the eggs one at a time, then stir in little vanilla extract.

  4. Gradually combine wet and dry ingredients.

  5. Stir in Carrots and chopped nuts and raisins.

  6. Pour the batter into the pans and spread evenly. Bake for about 35 minutes until a toothpick inserted into the center comes out clean.

  7. Let the cake cool fully  in the pan before inverting or taking it out onto a wire rack

  8. Let’s Make the Frosting: Take a bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually beat in the finely ground powdered sugar (made from Pride of India’s rock sugar crystals) until the frosting reaches your desired consistency. Stir in the vanilla extract. If the frosting is too thick, you can add a teaspoon of milk or cream at a time until it's easily spreadable.  

  9. Frost the cake once it  is completely cool. Spread the cream cheese frosting evenly over the top and sides of the cake

  10. Garnish with extra chopped nuts, shredded  carrot and a sprinkle of cinnamon.
