BUTTERNUT SQUASH AND CRANBERRY QUINOA SALAD

A salad is something that can compliment any kind of cuisine. Be it some nice and fancy dish or a light snack, one can never get enough of salads especially during the holiday fun. 

We bring you this recipe made from the goodness of Pride of India’s Organic Red Royal Quinoa, Cranberry and Butternut to make your Christmas Day all things wholesome! 

WHAT YOU NEED 


HOW TO MAKE 

  • Preheat the oven to 400°F. 

  • Toss the butternut squash with olive oil and add salt and pepper to taste. 

  • Spread the squash on a baking sheet and roast for 20-25 mins. 

  • Rinse quinoa and place it in a pan and bring to boil and cook partially. 

  • Combine the cooked quinoa, roasted squash, cranberries, red onions and toasted pumpkin seeds in a large bowl. 

  • Refrigerate for two hours and serve.
